Black Bean Salsa




(Ingredients)
(2) cans black beans, drained
(1) can corn, drained
(1) can diced tomatoes, drained
(1) can gr. chili’s
71/2 oz. Roasted red peppers, drained and diced
2 Roma tomatoes, chopped
1 medium onion, finely chopped
2/3 c. minced fresh cilantro
2 garlic cloves, minced
1/3 c. orange juice (not concentrate)
1 tsp. ground cumin
1 tsp. grated orange peel
1/8 tsp. pepper

(Directions)
Mix all ingredients.  Cover and put in the fridge for at least 2 hours before eating.
