Cracker Jacks

1 cup Butter
2 cups Brown Sugar
1/2 cup Corn Syrup
1 teaspoon Salt
1 teaspoon Vanilla
1/2 teaspoon Baking Soda

Pop three bags of microwave popcorn and divide the contents between two 9 x13 baking dishes. Heat the oven to 250 degrees.

In a heavy sauce pan, melt the butter, brown sugar, corn syrup, and salt. Stirring constantly, bring to a boil. Reduce the heat (turn your burner to about 4.5), and allow to boil for 5 minutes without stirring. Mix the vanilla and baking soda in a small cup. Once the mixture has boiled for 5 minutes, remove from heat and stir in the vanilla and baking soda mixture and quickly mix it in (this should make mixture look almost foamy). Pour evenly over the two baking dishes of popcorn and mix. Bake for 1 hour, stirring every 15 minutes. Pour the popcorn on the counter and gently break apart for cooling.
