Terri's 100% Whole Wheat Bread


Mix the following in a small bowl, and let set:


1/4 c. Warm Water

1 T. Yeast

1/2 T. Sugar


Put the following ingredients in the mixer:


3 c. Hot Water

1/4 c. Potato Pearls

3 1/2 c. Whole Wheat Flour

3/8 c. or 6 T. Oil

3/8 c. or 6 T. Honey or Sugar

1 T. Salt

1/4 c. Powdered Milk (Optional)

1/4 c. Wheat Gluten (Optional)

1 1/2 T. Oat Bran (Optional)

1 1/2 T. Dough Enhancer (Optional)

1 1/2 T. Ground Flax Seed (Optional)

1/2 c. Oatmeal (Optional)


Add the yeast mixture. Mix until all the ingredients are wet. Then, add the following:

2 1/2 - 3 c. Whole Wheat Flour


Knead in the mixer for 10 minutes. When done mixing, put the dough into a greased bowl. Let rise until doubled. Punch down and divide into three equal portions. Shape into loaves. Put in greased loaf pans. Let rise until even with the top of the pan or one inch above the pan. Bake at 350 degrees for 30-40 minutes. Remove from pans immediately and let cool.
